Corn Chowder

If you've ever been to a Mimi's Cafe then you will LOVE this...Their soups are amazing! This was redesigned to be Gluten Free! I also took info from three other cook books for the option of the bacon drippings if you wanted to make something really over the top! I didn't have a whole quart if half and half but had a pint of half and half and a half pint of cream! I think the added cream really made the soup richer! My husband found the crab and wanted to make it ito a crab chowder!

I'm sure that you could add some sherry, shrimp or other seafood if you wanted to make a seafood chowder! or Just use the butter add some extra veggies and keep it all creamy veggies soup! I'm telling ya it's very yummy that way too!


4 Tbsp Butter or Bacon and drippings
6 Tbsp Onion or one small onion chopped fine
¾ cup celery diced
2 ½ cups Hot water or chicken stock
2 cups raw potato
3 cups frozen corn, thawed or canned corn
2 Tbsp sugar
2 tsp salt
1 pinch white or black pepper
3 Tbsp Cornstarch
1 Quart half and half or 1 pt half and half and 1 half pt cream and one carton water
1 can real crab meat (optional) I used refrigerated kind

Melt butter or rendered bacon drippings. Add onions and celery sweat for about 5 minutes brown if you like that way! I do!

Add warm to hot water, potatoes, corn and seasonings. Cover and simmer for about 30 min. On a gas stove and small dice on potatoes it can be ready to do the next step in as little as 12 min so check the pot a little before half way!

Whisk cornstarch into 1 cup of half and half, and then stir well blended mixture into soup. Then add remaining half and half. Simmer about another 12-15 minutes with the lid off. Occationally stirring from the bottom so the corn starch does not scorch as it thickens!

Add more salt and pepper if needed. To thin soup, add milk. To thicken soup simmer an additional 5-10 minutes for desired thickness!

Great base as a seafood chowder! Yummy!

Easy Chicken Chili

As the snow was falling I was trying to decide what I wanted to make for lunch. I was going to do potato soup, and then I was inspired to try to make White chicken chili again by one of my friends on Facebook!



Granted it isn't a Glueten Free version that I have been striving to eat more often, but I was trying to clear out my pantry and find something quick to make with what I had on hand!

Easy Chicken Chili

1 can cream of chicken soup
1 lb ground chicken
1 can beans of choice
1 can of corn
2 tsp chili powder (heat of choice)
4 oz salsa (heat of choice)
1 cup or 8 oz of favorite cheese (Cheddar works well)

Brown chicken or you can use leftover chicken! Then add in cream on chicken soup with almost one can of water stir to blend together. Then add salsa, beans, corn, and chili powder to taste! Heat till hot, and allow to simmer a little while. You can top or mix in cheese if desired! Top with bacon, sour cream, or torita chips, etc!

Did you know they were putting sand in our tootpaste?

I've called Crest, Aquafresh, and Colgate today and every single one is putting Silica in there tootpaste. That's right sand! Oh, but it's processed and cleaned. Sanatized and pluverized, but it's in our toothpaste. OK now I've been cleaning my teeth for years with tooth paste that didn't have sand in it and I only have 4 cavities. Not bad for a child who LOVED candy.

Also if you look up Crest they don't give you their 1-800-492-7378 number they want you to send them an e-mail and someone will get back to you shortly. I found the Crest 1-800 number on the back of a sample tube from the dentist! Aquafresh wasn't all that nice, but Colgate and Crest were very friendly. It's difficult when you don't want to brush away your teeth, and the flavor doesn't taste quite right anymore! Kinda gritty like sand although they would swear that you shouldn't be able to taste it!

Ranch Dressing

1/2 cup dried parsley
2 tsp dried dill weed (or more to taste)
8 tsp onion powder
8 tsp salt (optional) I don't use the salt at all!
4 tsp garlic powder (I add more)
2 tsp ground pepper (white or black pepper works well)
8 tsp dried onion flakes

Mix one-two Tablespoon(s) of dried mix with 1 cup sour(8oz.) cream for dip or 1 cup mayo and enough milk to make it smooth (regular or buttermilk will work). You can also use some of the sour cream dip with some milk to make dressing too...Also half sour cream (4-8 oz) and half Mayo makes a good dip! Then if you need a dressing add milk to make it the consistancy yo want!

When using fresh herbs you may need to crush them and use less than above, but a blend of the two types would work well.

I also like to use freeze dried herbs and I like the Litehouse Salad blend that I have found at Farm Fresh! I've thrown it into this mixture to make it go further, and it just brings the whole mixture to a whole different flavor level..I .Like it as is without the salt to me is good, but add the freeze dried herbs and wow As little as a Tablespoon of the freeze dried herbs to the rest of the mixture. Strange as it may seem!

The dried and freeze dried together keeps really well in a sealed container on the counter I've never done fresh, but of course your mixing it all and puting it in the frig so it's going to keep! I do know that you will need three times the amount of fresh stuff than the dried because the dried is more powerful or concentrated!

1 tablespoon of fresh oregano, you need only 1 teaspoon of dried, since 3 teaspoons equal 1 tablespoon

So if you want to do a mix of fresh and dried I bet for dill and parsley that would taste amazing! Tinker with it and let me know what ya think!

Let me put it this way! I've had a really difficult time eating anything out of a bottle with maybe the exception of Ken's Steakhouse, but even my husband doesn't want Ranch from anywhere but home!

And he's asking me to try making other dressing too...So we shall see...as I keep testing stuff!

Pork Chops and fixens!

Today I made One Inch pork Chops that I got from Angel food ministries!
www.angelfoodministries.com I only order every other month from them because I don't seem to have everything used up by the time it comes time to order from them again or I don't have the money when it is time to put in the order. So this time I will order early mark my calandar for pick up, make room in my freezer, and plan my cooking schedual around it!

I pulled the frozed pork chops out of the freezer set the oven at 350 degrees put favorite bacon and herb dressing and bbq sauce on while in a pyrex dish. Then into a the oven for aprox 55 min. I turned them about half way through let them rest for about 10 min., and they were perfect! Slow roasted to perfection! I made instant mashed potatoes that I got two packages in a box for $0.25 at Ollie's Bargian outlet, and some Succatash I made.

For the Succatash I took a can of Allen's Butter beans with vadiella onions, frozen corn, and dice tomatoes, garlic powder, and bring to a boil and then simmer for about 15 min. Yummy!

I wish I had made some stovetop stuffing, but I didn't and I did not have any of the cornbread or pork kind, but the chicken would have been good too! Hubby had toast and my child had croutons...so whatever works!

I have some leftovers...With some of the Succatash I made some soup so I have that for lunch tomorrow too! I added to that instant potatoes, and some beef! I could have eaten all that too, but the pork chop was divine! So I'll settle for that tonight and have something yummiful to lookforward to tomorrow! I even used Omaha beef in the soup! A little good beef for flavor goes a long way!

I got the beef that one might use in stew from them and I used that for the soup they sent it to me in 8 oz packages! It's SO good my little one could eat the whole thing! So to get the most out of the flavor I use these packages in things such as above!

Dried Ranch Mix

Dried Ranch Mix

1/2 cup dried parsley
4 tsp dried dill weed (or more to taste)
8 tsp onion powder
1 tsp salt (optional)
6 tsp garlic powder
2 tsp ground pepper (white or black pepper works well)
8 tsp dried onion flakes

Mix one-two Tablespoon(s) of dried mix with 1 cup sour cream for dip or 1 cup mayo and enough milk to make it smooth (regular or buttermilk will work). You can also use some of the sour cream dip with some milk to make dressing too...Also half and half sour cream and Mayo makes a good dip! (Equal Ratios of Mayo to sour cream) to 1-2 TBSP of the dry mix depending on how strong you want it! You can add optional real bacon bits if you want it to be a bacon ranch or at the dry point you can add the type the mock kind that doesn't have to be refrigerated!

Store this in a dry container that keeps out moisture much like a Tupperware bowl or something and just use what you need at a time!

I've made Variations of this depending what spices I had or what kind of party we were going to! There is NOTHING like a fresh dressing and this certianly makes a good one!

Now for those that are Hard core name brand it's difficutl to get them to change especially children! My 11 year old nephew will eat it at my house because that is all I have, and my Dad if he had anything do to about it would be all he had at home! The doting grandmother on the other hand wants to make the grandchildren happy! hehe But as he has gotten old and each time he's come to my house I've invited him to help me make it so he came smell the herbs and see how much less goes into it than ALL the other ingredients that are on the LIST of the brand he likes!

My mom seems to think we are getting closer to a breakthrough, but even with children it takes time! Just like some adults time time ajusting to something new and different! If it taste good then you keep craving and wanting more of that item! Kinda like me, and the time I am having with getting to write this!

Not being so tired that I get to enjoy my family time at the end of the day! The recipes Ihat I'm hoping to share will be my takes on thing that I love have created or gleaned from other sources. I will do my best to give credit to the sources where I got the inital recipe...if not I appologize...This one though...looks nothing like the orginal!

This came out of a Facebook Conversation with a friend!

For an Easy on Container Casserole You can try this

Ranch or Honey mustard Chicken

You take and either in a 2 qt plus caserole or long pan put down the rice the water you need for the rice or chicken stock, then the chicken put some honey mustard or ranch over the chicken...pop in the oven to bake...turn over half way through if you want put a little more honey mustard on there then some cheese at the last five mins. take out Chicken and fluff rice!

You can put in your choice of veggie that would taste good with the rice too!

If frozen and thick chicken breast I'd do 425 for boneless after 20 min....it may take around 40 to 45 if thin around 30 mins.

If defrosted about 30 minutes....

Bone in about 45 unfrozen about an hour frozen depending on the oven!

Just keep a watch on in...At 375 though it will cook slower, and take an extra 15 minutes for both!

A new dawn!

I didn't get much sleep last night, but a new dawn certianly made my day brighter!

A vist from a friend and a reminder from one that I guess I'll say has known me much longer reminded me that I don't need users in my life!

I was hurt, torn, and upset! Today while I was sitting with my consouler I knew I had seen glimmers of this horrible person, and had not torm myself away from her. Now I have to just make it RIP, and while it will hurt for a little while it will be for the best. Although I don't know that it will hurt all that much for me anymore! I have A LOT of peace about this! I just have to stick to my guns! My "Just say NO" program! Who said it had to be just about drugs! Nancy Regan had a great idea when she started that! Don't be a chicken..."Just say NO!" I still have that shirt some where around here I think I need to break it out and let my child wear it and remind me of what I need to do for MY health!

I can't afford no matter how much I want to help someone else an hold their hand! NO one did it for me, and so I can't do it for them. About the ONLY one who ever took me to a doctor's appointment and did a whole LOT was my next door neighbor and I don't know what I would do with out them!

I found out today that the stuff she was trying to say about school starting at 7:30 a.m. was nothing but a lie and it was only ONE school board members intrest in if there was any community intrest. This person was wanting me to homeschool my child so she could home school hers. She doesn't have hardly any control over her children why would I want to teach mine and hers and she offer me NO help! I've decided that my child is going to school! My child needs the social interaction, the chance to see if the classroom setting is a place that they can thrive.

I know that I will be exposed to all kinds of stuff when my child goes to school, but I was a school teacher and so far I haven't gotten EVERYTHING that has been brought home. Sometimes just putting the child on the couch and staying on the other side of the room while they sleep peacefully helps keep germ exchange down. Form such a small child my little one understands "Mommy can't be around too many germs." So washing hands, changing clothes, and pillow casing etc. numurous amounts of times keeps more germs down than lysol and hand sanitizer combined.

It all went into the washing machine on sanitize mode no matter if it said it could be washed in HOT water so it got cleaned. I found I did not get sick this time, but that doesn't mean I will be as lucky next time. I gave out some coco mix as Christmas Gifts this year and my Schwans man's family LOVED theirs so he was saying his mother was wanting to pay me to make some, and I was like...no no here's the recipe!

And here it is....REALLY simple...I've picked it up from similar versions on the web so if you think I'm trying to copy yours it is NOTHING personal I've made my own spin to it!

1 Bag Mini Marshmellows
1 regular size container Hersheys Coco Powder
1 contain your choice flavor non dairy creamer (I used Italian Creme)
1 1 pound bag 10x powder sugar
2 8 oz bags mini semi sweet chocolate morsales (I used Neasle)

Optional:
Change out non dairy creamer to powderd milk
may add instant coffee (Medium size jar)for latte flavor

Mix all dry ingredients

Mix 2 Tbsp to 1/4 cup mix in mug of choice with water or milk depending on amount of chololate you like!
