sloppy Joe pizza

Make up your favorite sloppy joe recipe, leftover mashed potatoes, a crispy pizza crust baked, and some cheese of choice.  I loves some French's crunchy onions too!  I ended up using just some BBQ sauce with the meat because that is all I had and didn't have a can of sloppy joe mix.  Then layered the potatoes, meat, cheese and onions on top of the crust for a yummy dinner. Add a salad or cut carrots etc for a complete and lovely dinner.

Just go with what sounds good.

Enjoy!

Meatless ranch taco soup

Been a while. Made lunch like a book I gave the hubs. A Man a can a plan...only I'm a woman. Lol. I made my homemade ranch mix, and then used a can of beans, can of corn, about 8 ounces of salsa. Then added a table spoon of the ranch mix, a half tablespoon of the taco seasoning and what was equal to a can of chicken broth. This soup was met with success. Of course all was heated through and topped with cheese, and would have used cor. Chips to eat it with had I had me! Enjoy!

Tonights dinner!

The last day of May is hotter or as hot as the Forth of July around here, and I found myself in need to start clearing the frig.  So I made a catch all pot of soup.  That I have a feeling will be good hot or cold.  I put a little bit of everything in it!  Right down to a ribeye steak!  It just wasn't coming together right so I totally pureed some of it with my imursion blender!

Totally took it to a new place. Left some of it like it was, and blended the rest!  My new pots and pans are awesome, and I'm cooking up a storm!

I need to see if anyone wants left overs so I need to call a friend of mine and see if she wants some.  I also need to clear out the frig!  We also did some peeler shrimp with it...Just the best thing for a HOT night dinner!

Yummy Mayo salad ideas!

My mom left today after spending a few days with us! My mom left the boiled eggs in the water and so they turned that funny green color. While nothing is wrong with them they just have that odd color!

Then I got too much mayo and So I took some and put it with some potatoes and it seemed to help taking a spoonful of the egg salad out of the bowl and put it into the potatoes to make potato salad! It's very yummy! Think I will do the same to make Chicken salad, and then I will have my trio of salads. Thought of making pasta salad, but really don't feel much about boiling any pasta right now!

Overall...Life is GOOD!

Another Post!

Last night I made BBQ chicken and bean chili! With Fries!

It was SO good, and Gluten free for the most part. If I left out the Schwan's Tuscan bean soup it would have been completely but it adds a lot of flavor, and has extra veggies that I can't get the family to eat otherwise! Then I add a can of white beans, some tomato sauce, had browned some ground chicken, added BBQ sauce and Honey Mustard! Then some Garlic and freeze dried dill to taste!

Topped the chili over some fries with some Cheddar cheese and it was heavenly! Some of my favorite dishes haven't been planned they just develop!

Trying to develop more Gluten Free Ideas and I will post them as I work on them! GF can be amazingly good, and still stick to my southern roots and favorite foods with just a few modifications!

No new recipes

Well I need to work on some new recipes seeing as that I have a new diagnosis! Idiopathic Hypersomnia! Basicly a nice way of saying..."You can't sleep, your tired and we don't know why!" Kinda stinks! I love to see if CPAP would help my snoring, but my apnea isn't bad enough to qualify me for one! At least my husband has been used to planes landing over top of him so my snoring is nothing and he can sleep through anything!

Naps, haven't helped this, meds haven't helped a whole lot except one, and my Government run medical insurance (compliments of the US militarty) doesn't want to pay for it!

Tonight's easy dinner though was taco's! I did make guac and slice a tomato to go with the meat and taco chips! Lemonade was the girls drink of choice! Yummy!

So just a Lazy day at our house with spring colds that won't go away due to the weather cutting back and forth from warm to cold! Just wish the weather would make up it's mind! 'Tis the season!

Cheers!
